Organic egg production dipped in February according to the Jacobsen insight. This is in line with prior year seasonal dips that generally occur in February and March. While there has been little hoarding of organic eggs, compared to the hoarding that has occurred for chicken meat, over the short term, consumers are likely to purchase organic products as a substitute for conventional products if they are the only items available.
