For the week ending December 4th, 2021, hog slaughter is forecast at 2.675 million head, a 4.0 percent decrease from 2020; a 4.6 percent drop from 2019; and an 18.3 percent increase from the prior week due to Thanksgiving down-time. According to the USDA Actual Slaughter Under Federal Inspection for November 14th, average live weights were at 291 pounds, three pounds above the respective period for 2020 and up six pounds since the start of October 2021. Over the next six weeks, hog slaughter is forecast to average 2.470 million head per week, 2.7 percent over the prior six-week average. This hog harvest is projected to run 1.6 percent and 3.9 percent below 2020 and 2019, respectively.
