Limitations to Expanding Organic Supply

Organic sales are steadily increasing, according to the Organic Trade Association’s 2022 survey data.  Organic produce leads the category, generating $22 billion and comprising 15 percent of all fruit and vegetable sales in the U.S.  Organic beverages have also posted gains, rising 4 percent to exceed $9 billion annually.

Organic pork, a minor category, increased over 10 percent to surpass $63 million.  This category has been limited by extensive sales of pork under other categories, like natural and pasture raised.  Much of this is transacted on the local level, or through companies like Niman Ranch.
